Polk Salad

Hey, y’all! Have any of you ever eaten polk salad? If not, let me tell you, you don’t know what you been missing! They are some of the most delicious spring and summer wild greens you will ever put in your mouth! Here are some a family member of mine cooked yesterday. I’m still smacking my lips!

Cooked down with some onions and a chunk of cornbread on the side, I was in polk salad heaven! Now don’t this just make your mouth water? It’s very simple to prepare. Just follow the steps below.

  1. Pick and wash your polk salad.
  2. Boil it until it turns dark green in color.
  3. Drain it and put it back in your boiler or in a skillet.
  4. Pour some oil (whatever type you prefer) over it (not too much now–you don’t want it to be too greasy.) Stir and simmer.
  5. Saute’ your onions in some butter–don’t cook ’em to death because they’ll cook more after you add them to the greens.
  6. Add onions to the greens. Season to taste, stir, and simmer a little more.

And there you have it! Now, after you taste it, if it ain’t some of the best food you ever put in your mouth, I’ll slap myself. 🙂

Sunday Dinner At Maxine’s

Hey, y’all! I know it’s been a while since y’all have heard from me, and I do apologize. Things have just been so hectic, but I had a little free time and wanted to tell you about my Sunday dinner today at Maxine’s. You know, there is nothing like good, ol’ home cooking. I’m usually the one who cooks dinner every Sunday for my niece Paula and me. However, today, Maxine cooked this delicious meal and invited us to her house to eat with her and her family. Here are some pictures of what we had.

Container Gardening

Hey, yall! I know it’s been a while since yall’ve heard from me, and I do apologize. Life’s been keeping me busy as I’m sure it has all of you, too. Well, today, I just want to share a quick post with yall about container gardening. Yesterday, my niece Paula and I helped Maxine rekindle her container gardens. The photo above is the after effect. Down below is the before.

Huge difference, isn’t it? No, it ain’t no botanical garden, but it looks a heap more better than it did. Container gardening is very easy. While Maxine usually likes to start most of her gardens from scratch by putting her own plants in containers, this time, she just went to her local Home Depot store and bought two of their already-made containers and a 12-pack of little, purple pansies that she put into two separate containers she already had.

Well, there you have it! And as you can see, it doesn’t take a whole lot to spruce up your yard a little even in the wintertime.

Examiner of Hearts

Hey, y’all!  This is Eevie!  I know it’s been a while since y’all have heard from me, and I do hope you will accept my sincere apology.  This old lady has not been doing a very good job of keeping up with her posts, but I promise I will try to do better.

My thought for the day that I want to share with y’all is below in a picture that Maxine took one day during the summer when she and I were walking in the park near where she lives when I was visiting her in Georgia.  As most of y’all know, I live in North Carolina.

EXAMINER OF HEARTS

You Are Worth More Than Many Sparrows

“You are worth more than many sparrows.”

(Matthew 10:31)

Have you ever felt unworthy in God’s eyes?  I know I have.  Sometimes, it’s so hard for me to envision any good He can possibly see in me.  But you know what?  He never fails to show me in His own time and in His own way that I do have value in His eyes.

There may be times when we feel like some trial we’re struggling to endure has crushed us into the very bowels of the earth.  But just when we think we can’t rise from the dark gloom of despair, our Heavenly Father sends us a trickle of light to let us know He has not abandoned us.  And sometimes, he does it in the most subtle of ways–kind, understanding words from a fellow human being, a warm smile that brightens your day, or a hug from someone special that simply says, “I may not know exactly how you feel and exactly what you’re going through, but I feel your pain in my heart because I care for you.”

These are but a small number of ways that our loving Creator tries to help us to see that we are indeed important to Him.  So the next time someone reaches out to you in the godly, loving way in which they are capable, don’t just thank them–but thank God as well because He, too, cares very deeply for us. (1 Peter 5:7)

Aging Gracefully

Age is an issue of mind over matter. If you don’t mind, it doesn’t matter.

Hey, y’all!  I read an article recently that I thought was very encouraging, and I want to share it with y’all.  It’s about how to age gracefully.  Have you ever heard the saying, “Age is a state of mind.”?  Well, when I was younger, I thought it was a whole lotta gibber jabber because there was just no way in the world that could be so.  Well, I’m here to tell you, now that I’m older, it is the absolute truth!  That’s why when I came across the saying above of Mark Twain, I just had to use it in this here post.

Now I’m not saying getting older isn’t hard–some days, it’s tougher than beef jerky!  But I want you to know that just like with anything in life, our attitude plays an important part as to how we age.  One of the things I really appreciated in the article was where it talked about broadening your horizons by being alert for opportunities to read and learn new things.  You know, some folks think when you get old, you’re supposed to just sit back in your rocking chair and do nothing.  Well, if I’d done that or did that now, I’d probably be six feet under.

Now I also realize that we are all different and can’t do all the same things, so we have to learn to pace ourselves and not compare ourselves with nobody else.  God don’t make no comparisons, and neither should we.
